The enemies outside of Vordt's arena only drop the Lothric Knight Sword, Spear and Shield plus the armour set. They won't drop the Ultra Greatsword you want. It's an ultra greatsword just to let you know. You can't get it from those knights. Keep playing the game and do Greirats quest and check his stock.
